The Champagne 'Blanc de Craie' by Henri Giraud is a Blanc de Blancs that pays homage to the gypsum soil of Aÿ. The name celebrates the craie, the clay that gives minerality and tension to a Chardonnay coming for over half from Aÿ and the rest from Louvois. After fermentation in Argonne oak barriques, the cuvée rests for six months on the lees and about three years in the bottle. In the glass, it presents a golden yellow with greenish reflections. Aromas of lemon, grapefruit, ripe pear, and toasted brioche precede a fresh and silky sip, with Burgundian creaminess and lively freshness, finishing long and salty. To be served with raw oysters
